Banana Matcha from 52teas

Matcha Try #2:

Heated water to 160 in the Breville. Heaping 1/2 teaspoon of matcha. Made paste to break up clumps. Whisked in 8 oz water. Sipped. Then whisked in 2 more ounces. Sipped. And 2 more. Flavor is still great (lovely candy banana, with a sweet-grassy green tea), and it’s much smoother.

Seems to be dredges in the bottom of the cup, so does it settle as it sits? I’ve re-whisked some, and am going to add more water and whisk more. Not giving up on this. I’m not.

yes… matcha does settle as it sits. Generally, when I make matcha it doesn’t sit long enough to settle because I drink it fast… but, yes, it will settle, but it wouldn’t hurt to just rewhisk as you sip it.

I definitely did better this time around. I usually sip my tea rather slowly, so I’m sure that is part of my problem. Gonna try again later, this time with less matcha to the water to try to get it to stay suspended in the water.

I also have texture issues. Can’t eat applesauce because it feels funny in my mouth. This definitely has a different texture than regular teas. Even after I’m finished, there kinda feels like a coating on my tongue.

That “coating” is normal with Matcha, though. It shouldn’t feel grainy or chalky though – this usually means that it either wasn’t whisked properly or that there was too much Matcha. But it does impart a thick coating sensation on the tongue.

Okay, good to know it’s normal. First time around was much grainier; the second cup was a lot better. The whisk I’m using is probably a big part of it (but it’s all Mama France has, and I’m visiting her). My whisks will work much better, I’m sure. And if all else fails, I’m sure somewhere in my town sells the bamboo whisks.

I drink my tea neat now, because I’ve yet to find the sugar/milk combination that lives up to Pablo’s.
