Oh, though not strictly baking, chocolate candies are excellent things to infuse with tea. Truffles are heavenly if you steep the cream strongly with earl grey. :)

Mother-in-law has a garden. Anyone who has a veggie garden or knows someone with a veggie garden knows that zucchinis are deliciously invasive. This explains why I had this zucchini. I was pretty tired of my usual savory zucchini recipes and I used up all my eggs, so I found this recipe.

Yes, zucchini brownies. They are secretly vegan and obviously delicious. Great with my chocolate cheesecake red matcha latte. That name is worthy of a Starbucks creation. :)

I love baking!! There is usually something baked on hand in my house…. Cookies, tea biscuits, scones, banana bread, etc…. I eat healthy throughout the day so having a treat with tea is not a big deal. Some of my baking is actually healthy too… There is vegan banana bread that I love that is made with quinoa, flax and oat flour. I also use only organic ingredients and reduce sugar content whenever I can.

I found it interesting how many recipes I made without questioning the sugar and fat requirements. I’ve reduced or replaced sugar and butter in many of my favourite recipes and the results have still been delicious!

Exactly! I found that many times you can reduce amount of sugar significantly without affecting how delicious a treat is. You can also substitute honey for sugar in many recipes with excellent results. :)
