I have a Sunbeam variable temperature. It works in increments of 5 degrees celcius, however once it reached the temperature it has a display that shows the temperature as it cools. So for instance, if I want 83 degree C water, I set it to 85, let it beep, then watch the temp fall for a minute or two, and voila! 83 degree water. I’ve had it for years and it hasn’t failed me yet. Best part was that it cost me less than 30 dollars! Here’s the Canadian Sunbeam site:

I’m not 100% sure where you can get one these days, but it’s definitely worth looking into! :)
