What's your favorite way to brew tea?

I use an electric kettle and dip a digital thermometer probe inside (when needed). The water then goes into my Aqua-Ovo tea tumbler with a mesh filter on top. I generally use a microwave timer to make sure I don’t infuse for too long. I drain the tea into a big mug and save the leaves for at least one more infusion.

How I would love to have a variable temperature kettle! But I can’t justify getting a new kettle when the one that I have works perfectly fine!
