Really easy cup cake in a mug recipe to go with your tea

In a bowl, mix 4 tablespoons of flour, 9 tablespoons of hot chocolate mix, 1 egg, 3 tablespoons of water, and 3 tablespoons of oil. Whisk together. Pour into a microwavable safe mug. Put in microwave for 45 – 55 seconds. Watch for the cake to rise to the edge of the mug. It is done. So if you want something chocolate with your tea, try this. I can’t take credit, I got the recipe on YouTube, but don’t remember the person who made this recipe. :) But I wanted to share it. I’m drinking Pu Erh tea, which goes good with cake.

Or if you want a much healthier, low carb “cup” cake, use 3 tablespoons of ground flax, 1 egg, 1 tablespoon of oil, 1/4 tsp baking powder, 1/4 tsp cinnamon, a pinch of salt and either Splenda or sugar and microwave it. You can add raisins or I guess even chocolate chips if you must.

This tastes even better made into a pancake in a skillet.

For a gluten free version, try:

1TBSP coconut flour,
2TBSP cocoa powder
1TBSP sweetener of choice
1TBSP syrup (such as maple syrup)
1/8th of: baking powder, baking soda
1 egg white ( I have tried with flaxseed and/or chia seed slurry as a substitute.. still good results with that)
small handful of chocolate chips (optional)

Mix it all up in a pre-oiled microwaveable mug and zap it for 1-2 minutes (depending on the strength of your microwave..)

I like to top it with almond ‘ice cream’

Yes, I sometimes go 2 TBS flax and 1 TBS coconut flour, adds a little bit more sweet taste. With egg white I add a bit of water to extend it. Both versions of course are gluten free, and low carb, high fibre.

I made this today. It turned out awsome. I used some coffee crisp flavoured hot chocolate and it was delicious. Next time I makes it, I am going to use strong brewed chai to replace the water. Mmmmm.

On a side note, I have a small 700W microwave and had to cook it for 2 min 30 sec.

I have super high voltage in my microwave, and usually cook my food under the required amount of time.

I make “microwave lava cakes” on mason jars, and stick a chocolate kiss or chunk of chocolate bar into the middle of the batter before popping in the microwave. Makes for a nice spongey cake and gooey molten middle!

I rue the day I ever showed this recipe to my husband. I try to limit sweets for both of us, and usually, I have the control since he only attempts baking under extreme cravings. This mug cake is too easy and quick though, and now there’s these delicious chocolatey temptations on days I really shouldn’t have any! argh! Gotta hide the sugar from the husband…

Try making 3-2-1 cake. Take box of cake mix and mix with box of angel food cake mix. You will need to store in container. Mix 3 tablespoons of cake mix, 2 tablespoons of water, mix and microwave for 1 min. Very healthy version.

i’m definitely going to try this one.
it’ll be good to have this as an option when i have guests over for breakfast tea. i can even make smaller versions in my little bubble mugs.
