what taste and aroma do you look for in a green tea

Dear Steepster friends,

I live in China, running a small business selling authentic tea to a Western audience (www.minrivertea.com).
We will soon start sourcing new teas and while have a fairly clear idea of what people want from their black, Oolong and Jasmine teas, I have some doubt on what people are looking for in a spring season green tea.
In China, it’s all about the subtle, pure and fresh tones, but I am thinking that a Western audience might be after a slightly more noticeable grassiness or fruitiness etc..

Do you have any thoughts on this?

I love a really nutty and buttery green tea. Chestnut notes are some of my favorites! I also really appreciate a good lightly floral green. I had a green tea in China that was grown next an orchard so it had lovely floral and fruity notes that were amazing!

I think it really depends on the green tea you’re looking at. For me, the grassier the better when it comes to Japanese green teas. For lighter Chinese green teas, then I want something that is subtle, and pure, almost linen-like. For darker green teas, I like creamy and nutty notes. For a green tea that lies somewhere in between, I like something a little more floral. All of them must smell fresh though.
