Sometime this week I want to infuse a type of tea into an italian style pasta, in japan matcha noodles are not unheard of, Im thinking a stronger black tea and using a peach cream sauce with amaretto or should it be savoury?

Not yet, I did break down and make lechee tea biscuits
with whole leaves in it oddly enough it paired best with a white sow mee

I recently discovered that combining matcha, fresh lemon juice, and Italian tomato paste makes for a great pasta topping (with added spices and herbs, of course!). :)

If you used an earthy pu erh you could pull off a mushroom sauce with a bit of rosemary.
