Tea-flavored dessert items

I love the flavors of so many teas, enough that I want to have them even more than I can drink them. So I’ve been thinking about how one could make tea-flavored desserts, where the tea flavor would be more central than would be possible in a meal cooked with tea.

The first thing I think I’ll try making is a rooibos-flavored gelatin. My gf says that in China, they also prepared black tea flavored gelatin with condensed milk on top, to give it a milk tea taste. I’ve also bought some tea-flavored hard candies that were pretty good.

Has anyone else made anything like this, or have any favorite commercial tea-related desserts?

I haven’t fixed these myself but tasted them at a tea given by a local shop. They were a pretty color and had a unique flavor.

I know I’ve seen Earl Grey creme brulee on a restaurant menu or two. Here’s a recipe for it:

I just got some of Maeda-en’s green tea flavored ice cream mochi bonbons, and they are REALLY good. I’d highly recommend them to anyone who likes ice cream even a little bit.
