This is a surprisingly good Earl Grey. It has a strong bergamot flavor without tasting overwhelmingly of lemon, and the tea itself is robust. This deals with my common complaints about earl grey — most brands taste too much like lemon rather than bergamot, or the tea itself has hardly any flavor (Twinings is an example of the former, and any of those organic free-trade teas are a good example of the latter). This tea makes a good standby, and its strong flavor lets you make a nice sorbet out of it. Try this:
Add a cup of sugar to 3.75 cups of water and bring to a rolling boil. Remove from heat and add 6 bags of Bigelow Earl Grey (I’ve found it’s the best for this sorbet). Let the tea steep for 30 minutes. For a stronger flavor, add some lemon juice or a lemon rind (in large pieces so that it can be removed easily). Remove the bags and chill completely, then put it in an ice cream maker. Doubles easily — great for hot days.
