This Tung Ting is a high mountain tea, mid-oxidized in the traditional style to give the tea a richer, more intense flavor. To intensify this leaf, the oolong is slowly charcoal roasted in order for the oolong to develop a robust complexity and a caramelized sweetness. Because of the richness of the flavor, this is a great food tea but can also stand boldly on its own.
Wow. Really, now, the folks at Admaritea have the oolong hook-up. The select few I’ve tasted so far are absolutely exceptional including this one.
It’s quite dark but not least bit charred and has a deep, decadent sweetness.
