From Butiki Teas

Our Premium Taiwanese Assam is sourced from Yuchih Township in Nantou County, Taiwan. Assam bushes were brought to Taiwan in the early twentieth century but have since been refined by the Taiwan Research and Extension Station. The long dark chocolate-colored leaves produce a sweet fruity aroma. This malty tea has rich chocolate notes with notes of cinnamon, clove, and raisins.

Ingredients: Taiwanese Black Tea

Recommended Brew Time: 3 minutes
Recommended Amount: 2 teaspoons of tea for 8oz of water
Recommended Temperature: 212 F (boiling)

Happy Thanksgiving (Gratitude Day) to everyone in the World!!
I know Thanksgiving is an American holiday, but I hope everybody everywhere has things to be grateful for everyday. I think it’s important to take a few minutes at least once a day to be grateful for all that I have, all that I am, and all that I’m yet to be, and to wish for wonderful things in the lives of others as well.

I started my day by making 3 pie crusts, all gluten free. One is for a pie that I’ve made for years called Chocolate Midnight (Originally Chocolate Almond Midnight because of a praline almond decorative topping I omitted, from the vegan Millenium Cookbook) It’s the most decadent chocolate cheesecake textured pie you’ll ever eat, and you’ll never know it’s made with silken tofu. I know you don’t believe me, if you’ve ever had a silken tofu ‘fail’ dessert, and believe me, when I was a vegan (for years and years), I tried my share.

Baby, this is the real deal, and many people have fallen in love with this pie, not knowing the tofu truth, and once they found out, they didn’t care, it’s that good. It’s requested by several people every year & is a required part of our family feast. This year I took the gluten out of the crust.

I’m in the break, between crust making and pie filling making. I had a hearty breakfast and my last cup of Stacy’s Taiwanese Assam. I’ve reviewed it several times, and it is bold and tasty, but now it’s gone. I foresee a Butiki order coming soon.

Bonnie

Happy Thanksgiving!

Nik

Vegan, gluten-free pie that is yummy. WANT.

Terri HarpLady

Oh, yeah, you want it!! It’s ridiculously creamy & chocolatey and sweet too. Very rich tasting, I can only eat a few bites.
The first time I showed up at a family thanksgiving with that pie, it was Tony’s sisters house. Not a single person there knows the meaning of eating healthy (Tony is learning). I made him promise not to tell them it was tofu, at least not until after they ate it. They devoured it! The other desserts all sat on the table, looking dejected.

It’s also easy to make. Let me know if you want the recipe. You too can blow your family away with tofu! Just don’t tell them…
;)

Nik

Terri, I would love the recipe, thank you!

Butiki Teas

Sounds amazing! I’m with Nik, would love to get a copy of that recipe.

Donna A

And I am following right behind the others, hoping you’ll share the recipe!

Terri HarpLady

ok, send me your email addresses, & I’ll get that out to you!

Indigobloom

ok I want a copy to! maybe you should just post it as a discussion item lol

Terri HarpLady

Good idea, Indigo! I’ll do it!

Terri HarpLady

Done!! Now you guys can all go over to the discussion board, where we have a recipe sharing discussion group!

Indigobloom

sweet!! thanks Terri, you are awesome!

Terri HarpLady

Aww, shucks! Thanks Indigo!

Sometimes you just need an old favourite. This morning was one of those days. I had let the wonder of this tea become a mere shadow of its true deliciousness. I’m glad I dug this out earlier…just needed a reminder of how much I love it!

TheTeaFairy

Very well said, Sil! Glad it worked its magic for you :-)

Chelle

I can’t wait to try this one, in the mail!

Sil

This might be my favourite tea….if not, it’s tied for first through fourth place heh

Rachel J

Yay for Butiki and their amazing selection. :)

Wowwwww, this is delicious! Definitely glad I ordered some (shoulda got my free ounce of this instead of Strawberry Oolong!) It reminds me quite a bit of Laoshan Black, in that it’s very malty and chocolatey, but there’s quite a fruitiness to it as well. I had this in the Timolino, so I need to write a more detailed tasting note later, but this is definitely a winner for me. And the leaves are crazy huge, thin, wiry, unbroken. Fabulous!

I’m drinking the second infusion right now. It’s heading towards astringent in spite of only a 3-minutes infusion, but it’s still good. I’m sure it would be better re-steeped immediately instead of sitting all day.

Rating tentatively placed, but may increase upon proper evaluation.

Mmmmmmmm I love this one

Donna A

I love this one. I read your post and went to make some only to discover they I only had one teaspoon left, and I just put in an order to Butiki earlier this week without realizing I was almost out. Oh well. Next time! This may be my favorite Assam. I re-steeped immediately and it was very nice.

Kittenna

Donna A – Oh no! I can see this being a staple for me!!

Initially I was kind of expecting this to be quite similar to Laoshan Black, but although they so share the chocolatey, malty flavours, this one is definitely more nuanced and fruity. Different enough to want to keep both on hand and alternate!

Indigobloom

Oh man this sounds SO good

Sil

Indigo….you haven’t tried it yet? For shame! If I have any left when we meet up ill kick a sample your way.

Indigobloom

Nope, I need to reduce my cupboard before making a large order and didn’t see any sample sizes on the website so no Butiki for me :(
but if you’re willing to share, I’d be uber grateful!!

Sil

I am always more than happy to share butiki teas with the world! Lol

Indigobloom

YAY!! I hope the Kally order arrives sooooon

Sil

Not yet…..hoping mid this week. Then we can meet up and I can give you a bunch of stuff lol. Della terra, butiki, Kally tea etc….

Indigobloom

HAPPY DANCE
Geez, I am so impatient today. this whole waiting business is driving me nuts

Donna A

Indigobloom, the owner of Butiki, Stacy, is really nice and helpful on the phone. For people on Steepster, for any order, she’ll be generous with free samples, and will ask which one’s you’d like to try. I have several favorites from Butiki, including this one.

Sil

Paul- the two are similar and yet different. Both well with having in your cupboard at the same time.

This week has been pretty busy for us. We just got back from vacation mid week which was really a work vacation and will start prepping for another office closure as we will probably be taking off for another 2 weeks in about two weeks but this time for a real vacation. Also, we received in a ton of tea, including many new teas. We are also changing up a few teas. Here is a sneak peek of just a few of the many changes:

Adding: Hattialli Golden Paw (very similar to our Hattialli Golden Lion)

Changing: Irish Cream Cheesecake. Based on the reviews, we are thinking the base is just wrong for the flavoring. We used our everyday Sourenee, which is very good but also very fickle. It can be pretty challenging to get that tea to its sweet spot and it can turn astringent if the water cools too much.

Changing: Sourenee. We are exchanging the current everyday Sourenee for a very high quality limited edition Sourenee.

Adding: Hello Sweetie. It’s coming soon but first we will be doing a promotion with it.

Changing: Da Yu Ling. We moved too slowly on the Da Yu Ling for the winter harvest but the Fu Shou Shan is a fantastic replacement!

Adding: A baked Ali Shan.

Mi Xian: Just a little warning. We are low on Mi Xian right now and will not be able to get more when we run out as it is scarce at the moment.

These are just a few additions and changes. There are many more to come and many more flavors in the works, including the Custom Blend Contest tea which is getting close to finishing the recipe. We will also be removing a few flavors and teas that just aren’t up to the standards of the rest of the teas. I would love to hear any suggestions from anyone who believes there is a tea that should be removed from our collection.

On to the tea! This harvest has a slightly deeper dark chocolate note. There really isn’t much difference from this harvest and the last harvest but the chocolate is stronger and the malt is slightly stronger. There are less stems, which is fantastic! The upgrade version on the other hand has some cherry notes that were not detectable in the previous version.

Courtney

YES Hello Sweetie! And Hattialli Golden Paw. :)

Butiki Teas

Courtney-Glad to hear you are excited about those 2! :)

Roswell Strange

Very excited to be able to try Hello Sweetie!

Courtney

Also the others haha, but especially those two.

Stephanie

Excited about Hello Sweetie too, but also a little sad that the Irish cream cheesecake is changing. It was one of my favorites from my last order! Hope you have a great vacation in a couple of weeks :)

Cavocorax

Hello Sweetie!!!
I have a lot of Butiki teas from the BF sale, and from what I grabbed off other people, but I WILL be buying 2oz+ of that one… And to make the shipping worth it, I guess I’ll have to get some more Caramel Vanilla Assam etc.

Cavocorax

Will you give us all warning on the blends which are being removed? Just in case some of them are near and dear to our hearts?

moraiwe

Oh my! Hello Sweetie and a baked Ali Shan. Be still my heart. :D

TheTeaFairy

Wow, lots of changes, everything sounds really good!

As for the teas that should be removed, the one that comes to mind is apricot Guayusa, never did anything for me, but doesn’t mean it no good, just my own personal taste.

I had stock up on Taiwanese Assam, but now I’m running low…hmmm, for the upgrade, did you really mention cherry notes??? OMG!!! I might be in trouble…

P.S. I won’t wish you a good vacation in february cause I just know it will be awesome :-)

BrewTEAlly Sweet

Hello sweetie!!! Been dying to try that and the hattialli golden paw and Ali Shan!!! I have soooooooooookko much tea from you from BF though!!! So much!!!

JustJames

i need more caramel vanilla….. and i think i have to have a hoard stash of black lotus. i drink it and it makes me poetical— i think that’s a sign, don’t you? and btw, the fact that steepster’s auto correct is not freaking over the word ‘poetical’ is HYSTERICAL! it must be a fan of firefly…..

Butiki Teas

Roswell Strange-Excellent! Glad to hear that you guys are looking forward to that one. It turned out so good!

Stephanie-Well, I hope you like the new version! I’m glad you enjoyed the old version. Thanks for the vacation wishes! :)

Cavocorax-The Hello Sweetie won’t be coming out completely until March, so you have some time. :) We will be giving some warnings when we decide which blends are getting chopped. I’m not quite sure which ones will go. All of the popular, highly rated teas will definitely be staying.

Moraiwe-Glad to hear you are interested in those two :)

TheTeaFairy-And those are just some of the changes. I can think of at least 10 new additions that I didn’t mention, including maybe one of Stephanie’s tea entries. I think you might be right about the Apricot Guayusa. It really has only stayed around as long as it has because a friend of mine requests it. I always make her a pot of it with a cinnamon stick and rock sugar. Oh yeah, I am definitely tasting cherry notes. Well, my February vacation is changing a bit but not sure how yet. Unfortunately, I tore a tendon in my foot pretty badly from ignoring my plantar fascistis and continuing to stay on my feet despite doctor warnings. Not sure how the vacation will change but will definitely be traveling less. Thanks for the vacation wishes, I will definitely have a good time!

Butiki Teas

BrewTEAlly Sweet-Glad to hear you are interested in the Hello Sweetie! A big thanks to James on that one, for letting the tea go wherever it goes.

JustJames-Hahaha, poetical. Love that word. Glad you are a fan of The Black Lotus. I love that one so much! :)

TheTeaFairy

Oh nooo! That’s pretty tragic about your foot, so sorry about that…Hmmm, I understand why it might change your plans a little, that would suck though. I’m sure you will figure figure out something no matter what :-)

It will be hard to resist ordering soon…( keep it quiet, but I’m suppose to be on a tea hiatus)

Butiki Teas

TheTeaFairy-Of course it had to happen now. Doh! I can’t complain though, I have certainly had my fill of fun vacations. I know this will be fun too, even if scaled back. No worries, your secret is safe with me…and the rest of the internet. :D

Sil

Tea fairy… The two assams are totally different teas imo. I prefer the non upgraded version, but the upgraded one is tasty, but just a different tea. If youth in k of it as an upgrade to PTA, it falls short….treat it like a new tea:)

Butiki Teas

Sil-This upgrade harvest is a little bit different though. :)

Chizakura

SO excited for Hello Sweetie! :D When I read the description for it, I positively whimpered that it was a custom blend, haha. Especially since PTA is the base!

So glad that PTA and Upgrade are back in stock. :D I haven’t tried out all the teas I got from my last order from you, but I’m already loading up a cart for another. I miss my two PTAs!

… Just promise me that Foxy Roxy Banana Walnut Treat isn’t going. D: If it were to be discontinued, I think I’d go crazy and buy ALL of it and make it last as long as possible. xD

Chizakura

Will Mi Xian be gone forever? Or just until the next harvest?

TheTeaFairy

For obvious reasons, I also hope you’re not removing Foxy Roxy :-)

Butiki Teas

No worries guys, Foxy Roxy is here to stay!

Chizakura-Glad to hear that Hello Sweetie sounds interesting to you. PTA is my morning tea, I’m glad its back too! I was rationing my tea out for that one.

It’s one of my favorites. At the moment its scarce but hopefully not for too long.

Butiki Teas

I meant to say that Mi Xian is one of my favorites and is scarce, not the PTA. Just wanted to clarify in case that is confusing.

ifjuly

Aw, I seem to have a curse where my favorite Butikis relatively few others dig and they get changed or discontinued! I’m not complaining really, I totally understand, but it’s funny being the odd duck out. I mean this as a compliment, not a complaint, but I love the Irish Cream Cheesecake! I’ve been drinking it as a breakfast tea and loving it that way, where it’s brisk like a breakfast blend but with that treaty reward for getting out of bed, ha. Looking forward to seeing what’s new and excited about Hello Sweetie!

lolainred

oooo… I hope Pistachio Ice Cream isn’t going anywhere. I love that tea.

Butiki Teas

lolainred-Pistachio Ice Cream is safe! That was one of the first teas we made!

Yowza! I was starting to think that I wouldn’t need to order any more of this tea because the Caramel Vanilla is so amazing, but this cup convinced me that I need both.

Courtney

I was just trying to determine which of those two to order and ended up deciding on the Caramel Vanilla. Hmm.

Cavocorax

Well if I could only choose one, it’s be the Caramel Vanilla. But I think it’s be nice to have 1 oz of this one kicking around too!

OMGsrsly

I got the Caramel Vanilla, but I think I’ll get both in my next order. :)

JustJames

the caramel vanilla is outstanding. haven’t tried the taiwanese assam….. plotting for december is underway!

Amariel

It’s good, but I do think Caramel Vanilla has a bit of an edge on this one.

Kittenna

Straight PTA wins hands down for me. I really have to wonder if my Caramel Vanilla somehow lost flavour… although Sil got hers from the same bag as mine , and I tried it shortly after receiving the package in the mail. Hrmmm…

Cavocorax

Great! I love the feedback!

Reading my book and sipping on this for the last two hours.

I made it the way I really like it when I have all the time in the world for it. I fill the gaiwan with leaves, really, I fill it almost to the top. This tea is light in weight, so for me, that’s the best way to extract all the goodness I know is in there. It might seems like a lot of tea to waist, but it’s no waist when you can brew it for several hours. And the steeps remain rich and flavourful. A good night companion…

This is another one from Butiki I’m hoping will never disappear!

(See previous notes)

Fjellrev

Interesting method!

TheTeaFairy

Yes, I find I’m not achieving the results I,m seeking with short steeps if I use less. I know this tea is good no matter what, but this method elevates it to the tenth power for me!

Terri HarpLady

I still haven’t tried that with this tea…yet!

TheTeaFairy

I have no doubt time will come, Terri!

TeaBrat

Reading anything good?

TheTeaFairy

Well Teabrat, I just finished Rebecca from Daphne Du Maurier and I’m now contemplating either Ken Follett’s Pillars of the Earth’s sequel World Without End or Camilla Läckberg ‘s Ice Princess. Hard to choose sometimes isn’t it?

Butiki Teas

Interesting! I will have to try that. I usually fill the gaiwan about half way full.

TheTeaFairy

Stacy, I know, that’s what I do too with regular teas (meaning other than pu’erh and oolongs, those I weigh instead) but I wanted a bolder flavour and that’s what works best for me, very short steeps, lots of leaves. (Which I’ll be running out of real soon!!)
I would’t recommend it to someone not like a strong brew, but I know you do!

Butiki Teas

Are doing a 10 second steep on that? I’d like to try it how you recommend. :)

TheTeaFairy

OMG i would never dream of recommending ANYTHING to you on this tea, madam!!!

But 10seconds is probably what I do, I never really count, I “estimate” to give people and idea. So yes, I would estimate 10sec for the first 3 steeps and increase by 10 also for the subsequents. And as I often do, I read while brewing, so I forget it and it becomes almost syrupy…But call me crazy, I still like it!!!

I haven’t tried this with your Wild mountain yet, but i will.

Butiki Teas

Well, I would love to try your method. I will give it a try tonight. For this tea and the TWMB, I normally just do a 1/2 gaiwan filled steep for 30ish seconds. I like the first steep to come out a bit strong. It will be interesting to try it this way. :)

Butiki Teas

Whoa, the 10 second steep with a full gaiwan is delicious! Excellent recommendation. Very malty but still sweet.

TheTeaFairy

Phew! thanks for letting me know, lol, i was a little nervous that you might think I’m just a fool!!! So happy you liked it this way. Is it possible to ever mess up this tea i ask you???

Butiki Teas

It was absolutely delicious! Very different than what I normally do but I love how different it is. It reminded me of coffee a little bit in flavor though only what I would imagine coffee would taste like since I’ve only tasted like maybe twice in my life.

TheTeaFairy

Yay! You’re right Stacy, it does bring more of coffee almost mocha feel to it!

Terri HarpLady

Guess I’ll have to give this a try…

Still kind of disappointed I missed the Butiki sale due to vacation, but I still have enough of this to last me a little while, so I can’t complain too much. :-) I’m on my 4th steep of the morning. It went so well with the buttermilk scone I had for breakfast. See other notes for details.

Sil

no no no look at it as an opportunity to make sure your order includes MY tea (it’s not in stock yet) without having to have placed two orders… OR an opportunity to sidown more of your cupboard before black friday butiki sale haha

Sil

i’ve got my eye on your stacy….

Sil

*you

Terri HarpLady

I’ll be that person that ends up placing 2 orders….or maybe 3…

Butiki Teas

Sil-you always make me laugh :)

Sil

at least i’m good for something! ;) (still waiting for it to be very very soon…i should think it’s at least very soon.)

Fuzzy_Peachkin

lol! You crack me up, Sil! I don’t think I can stretch my flowery pineapple oolong until Black Friday, so I might have to place a teensy order before then.

Sil

wait until the new tea comes out! well new old tea..and by that i mean Taiwanese Wild Mountain Black…unless you DESPISE black teas…or have tried it and don’t like it lol

Fuzzy_Peachkin

That’s the magical unicorn tea I keep hearing about!

Sil

it reminds me a lot of some of the tasty teas i’ve had from taiwan tea crafts… i really love it

Prepped according to the below parameters – 2 tsp. leaf to 8 oz. water as per package directions.

The last few nights at work were rough but I don’t go back in until Thursday night at least. Sometimes I wonder what I was thinking, becoming a nurse. I love it but I’m such an introvert that I get positively drained after a few shifts and need the time to recover.
Speaking of introverts, I discovered I’m an INFJ recently. Anybody else know their MBTI type?

I say all this to explain why I’m drinking a strong cup of this malty, chocolate wonder now, instead of going straight to bed. It is so smooth, rich and comforting. Something about the smell of a freshly brewed, good black tea just relaxes me, and this is no exception. Strange how a tea can manage to be both calming and energizing simultaneously – but this one does that.

Just what I needed for right now…

Preparation
Boiling 3 min, 0 sec
Stephanie

Weird! I am an INFJ too…isn’t that type supposed to be pretty rare? Neat :)

Stephanie

Ad yeah, as a fellow INFJ, I’m real glad my job does not involve me dealing with the public directly…

gmathis

Didn’t we have a whole discussion thread recently on the introversion thing? I can’t find it, but I’m right there in INFJ land with you. My husband, King of Introverts, noted just yesterday that we have created a world that doesn’t understand the value of quiet.

JoonSusanna

@ Stephanie, they do say INFJs are pretty rare. Maybe an unusually high percentage are represented online, though, since its a way of getting people interaction without actually interacting.

@gmathis, I’ll have to search the threads for this! I’m definitely curious to see how similar as a group we Steepsters are…

Stephanie

Yes, online is definitely a LOT easier than in person interaction, so I bet you are right about the number of introverts online :)

Shmiracles

i’m an ENFP. but i still identify as an introvert. strongly.
in fact, my boyfriend sent me this drawing last week. (he is a true extrovert and i think i make him lonely sometimes) (but it’s been 6 years so i guess he’s okay with it.)
http://schrojones.deviantart.com/art/How-to-Live-with-Introverts-291305760
i feel like the drawing is our exact interaction every single day hahaha
welcome to my hamster ball!!!

gmathis

Love the art!

Stephanie

lol the comic…so true

TeaBrat

I usually come up as an INFJ or an INFP

OMGsrsly

(Hiss!) I love that part. I generally feel that way about people, but I truly do value social interaction.

Doug F

I’m an INFP as well. Idealistic and not exactly practical.

I fixed my Steepster at work problem and now I can load it again at work! Maybe not great for my productivity but great for my overall happiness.

Sipdown, 116. I have a lot of Taiwanese black teas in my sipdown list, but this is my favorite for sure. It’s not too fruity-floral but it does have nicely fruity notes. Caramel, sometimes a hint of cocoa, and hard to really oversteep. Definitely will restock this one, perhaps on Black Friday!

The leaves of this tea are stunning! Twisty and wirey with almost a blue tone hue to them.
The steeped cup is a lovely deep golden amber tone and smells of sweet potato and chocolate! OMG yes!
This cup is DELICIOUS! For my facebook friends who may be reading this – as I am going to be posting the review there as well…if you are not used to really high quality amazing tea like this just understand – this is not your mother’s or grandmother’s Lipton tea! Haha, my grandmother, bless her heart would drink that instant powdered tea daily, you know the stuff that came in the glass jar with the green lid. Today it is probably in plastic but regardless – this is a true delight and anyone who is even considering trying a different black tea should give this one a go!
There is a very sweet aspect to the tea, it has notes of sweet potato pie, even a bake-y element to it but it is not that sweet – not like as if someone spooned sugar into the cup – just a very natural sweetness. There are strong notes of chocolate and also notes of honey.
A very rich cup yet the mouthfeel is bright and cheery. It is not too heavy or syrupy.
This may be one of my new favorites! I wish I had tried this one sooner!
As if I do not have enough teas to drink I have added this one to my shopping list!
There is a slight very light note of cinnamon or some kick of spiciness here but nothing that my weenie husband could not handle …(love you babe)… and oddly enough I am even getting a bit of a saffron note!
As the tea cools a bit it does become slightly thicker with a heavier mouthfeel and notes of maple syrup begin to peek through.
I know it sounds like I am talking about a dessert not a tea yet this is not a dessert tea but rather a wonderful black tea that anyone would love!

Donna A

I am smiling right now after reading your review. I just got my order from Butiki yesterday (I am a 1st time customer). I am loving their Mi Xian black today, but when I read your notes, I was thinking, oh no, I need this one too! Then I checked my package and there was a sample of Premium Taiwanese Assam! I had forgotten that Stacy had suggested it. So I am very excited. I have mostly had Chinese blacks, so I’m really looking forward to trying a good Assam. My 1st experience with this company has been excellent. I spoke with Stacy and she was so helpful with her suggestions. I have a feeling I will be ordering a lot from this company.

Sil

Donna so glad you’re having a good experience with butiki. Stacy really is awesome :)
…as are her teas ;)

Azzrian

Yay Stacy is so awesome! So is her tea! I LOVE this one!
