This extraordinary green tea is one of China’s finest. It is hand-rolled in a voluminous twisted style to slightly rupture the leaf cells, and then warm-air dried in a method that mixes both white and green tea production methods. Only the 2nd and 3rd leaf of new shoots is used, and the result is an unusually delicate vegetal flavour that only gets sweeter when steeped for longer periods.
