roasted organic high mountain oolong
This selection is from the same farm as the unroasted organic selection. These leaves were medium-to-well roasted at the request of the farmer’s uncle – as it is common for mature tea lovers in Taiwan to prefer more cured teas. This batch produces a brew that is an amazing combination of sweetness that lightly coats a base of mild bitter that is somehow akin to smell of fresh-cut oak or maple wood. The bold character that is comprised of bittersweet and malty flavors and a smooth, viscous texture makes it a really interesting tea. Since we have begun to focus on organically grown teas, we have identified a certain quality of flavor and composition in the leaf that provides extraordinary brewing power. We are excited and honored to represent this tea which has taken decades of unswerving dedication to an ideology to produce.
