Finished off the dusty remains of the bulk bag this morning – unsaleable from a visual perspective, but a lovely warm, sweet, hay nose and mildly edgy flavour owing to the crunched leaves. Can’t wait for the new pickings to arrive.
Pai Mu Tan
Perhaps the best known white tea with an open big leaf and a pleasant, mild flavour. Delightful, light, sweet and healthy: as with all unfermented teas (but particularly more delicate white teas), take care not to overbrew – the great joy is in repeat-brewing the leaves until the flavour is gone.
