From Doi Mae Salong, North Thailand. Loose leaves Oolong tea, harvested and produced from a tea plant species that has been local to the area for hundreds of years or more. A daily standard in many Northern Thai mountain households, and a budget alternative for every demanding Western tea drinker.
The large-leaved tea, grown at altitudes between 1000 and 1400 meters and with a seasonal change between a rainy season, a hot and dry and a cold period in a 4-months cadence, unites a full and round, bold-flavored aroma, already revealing in both the dry leave’s and the infusion’s scent, with the bloomy and earthy note characteristic for Northern Thai Oolong teas. The liquor shows a clear golden brown color.
In the nomenclature of this tea, DMS means the cultvation region Doi Mae Salong, Santikhiri the local origin of the tea plant, and Fanzhi the open, slighty curled form the leaves of this tea are made available in.
DMS Santikhiri Oolong Tea, fermented beyond a medium degree of fermentation, will be best infused at a water temperature of 80-85°C and with an infusion perod of 2.5 – 3 minutes. Always good for sated 2 infusions, while a third infusion definitly still has a good potential for excitement.

Hello Steepster :)
This is an Oolong that I could drink often, it is deliciously bold to me with even a little earthyness to it, The Aroma is wow so good in both the steeped leaves and the dry leaves you can almost taste it when you smell the dry leaves. Short infusions in the gaiwan made several cups

I’m home from the hospital with Lance getting things ready for him to come home and be comfy hopefully later on today :), it feels so good to actually sit down to a good cup of tea it’s only been a few days since I could do that but it feels like a month to me,The few short times that I’ve been homeI just didn’t have the time or desire to have tea because I just come in a eat fed the dogs took a bath and went right back up there with Lance, I try to be there for him as much as I can. This tea right now is better than it has ever been!!

I already made my notes on this one a few times, This one actually replaced one of my favs for iced Oolong to keep in the fridge, I made this one just like I do Lance’s iced teas only in a smaller pitcher just for me and with not as much sweetener. I do enjoy slightly sweetened iced tea tho but then again I am a southern and thats what we do down here lol, Anyways I’m really surprised that Lance don’t care for this one because it is a really good tea with nice chocolate tones when iced (I think I mention “chocolate” like aroma in this one but didn’t mention chocolate like flavors) but lance just don’t care for Oolong which is a shame to me ;) I’m at dialysis with him today and I filled up a small water bottle of this to bring with me it is drank up and now I want more lol I like Oolongs like this with “darker” tones.

I think I will make a pitcher of this one Iced, its really good iced too.

Thomas changed the name of this one recently from DMS Santhikiri Fanzhi Oolong to DMS Bai Yai Oolong . Is one of my 2 favorite teas :)

This tea smells as good as it tastes, almost almost smells like a chocolate bar laying on fresh cut grass lol weird i know but very good. Many steeps from this one too pending on how ya do it, i do short steeps from the gaiwan at least 8 times before it even starts to fade and then it still very good until about the 12th steep. I bump the rating on this one up a little bit :)
