A select picking of plump spring buds, this Bai Hao Yin Zhen is the perfect white tea. Grown and harvested by a tea maker we know, this small lot was offered to us and upon tasting it, we think it captures the essence of the spring harvest. Yin Zhen is one of China’s famous teas, a tea that should be tasted at least once in a tea drinker’s lifetime. Light in color with hues of green and soft yellow, these buds are covered with tiny, downy hairs that give a velvety appearance. The cup color is pale with a delicate yet very evident flavor of fresh apricot or ripe melon. Yin Zhen is a variety of remarkable and ethereal Chinese teas that are made with an exacting skill in processing.

This one of those teas that if you are not REALLY into tea, you will simply not appreciate it at all. A very mellow light, yet nutty savory sweetness. The leaves have a slight nutty smell and it becomes more apparent while steeping them. The liquid is incredibly light color, almost clear. But within its subtlety hides complexity of flavors (sweetness almost like a melon but hidden behind its most apparent nuttiness a slight vegetal taste).

It is not your common silver needle with sweetness as the star but rather a tea to enjoy because of its craftsmanship and apparent purity. A must try for people for white tea lovers; a cup to avoid if you like bold tea.
