The finest grade of Hei Cha (dark tea) from Hunan Province, Aged Tian Jian 2012 (Heavenly Tips) produces a complex cup. The first sip entices the palate with hints of bamboo water, stewed plum, and raw almond. Then a musky undertone complemented by gourmet notes of maple wood smoke and pine gradually develop throughout subsequent infusions. Similar to an aged Sheng Pu’er, Tian Jian leaves a lingering aftertaste that is sweet and soothing.

Unbeknownst to many outside the tranquil village of its origin, Tian Jian was once a tribute tea exclusive to the imperial court. Till this day, local tea makers continue to handcraft our Tian Jian the old fashioned way. The tea’s rustic appearance speaks to its centuries-old heritage. After a light fermentation, the leaves are dried over gentle pine wood fire. Once firing is complete, the leaves are stored in a bamboo basket for natural oxidation and further aging. Highly recommended for connoisseurs and the curious.

Brewing instructions: Use a heaping teaspoon for 8 oz of water. Steep at 212° F for 3 minutes. For subsequent brews, steep for 30 seconds to 1 minute.
