From Soocha Tea

Balhyo Cha that literally translates to “fermented tea” is a traditional local black tea in Hadong, also known as Jaeksal or Jaeksul in the regional dialect. Our Balhyo Cha undergoes a very unique oxidation process of spreading out tea leaves at dawn in a bamboo grove in Jiri Mountain to expose them to the dew from the bamboo.

This Balhyo Cha, made entirely by hand, has delightful notes of cocoa, roasted grains and steamed milk with a honey sweet aroma. It has no bitterness unlike typical black teas, which makes it easy to drink.

Our Balhyo Cha is grown and processed by a certified organic farm(USDA, EU).

Origin: Hadong, South Korea

Harvest: Early May, 2019

Ingredients: Korean Black Tea

Steeping Recommendation:

3g | 240ml | 90ºC | 1min

For multiple infusions, increase temperature by 5ºC and steeping time by 30 seconds for each steeping.

3 infusions recommended.

Sipping on some Balhyo Cha in this gorgeous teacup from *TeaWithJann and possibly the cutest ever macarons!! The tea is naturally sweet with flavours of caramel glazed roasted peanuts, cocoa, dark honey, and jammy red fruits which is the perfect darker sweetness to compliment and contrast these brighter macarons!

Plus, can we talk about how stunning the cup is!? I was immediately attracted to the unique geometric shape of this teacup and the colourful Spring time flowers that look practically hand painted. Jann’s eye for vintage teaware is amazing, and it definitely makes me understand why she felt she needed to limit herself to one colour of teacup!
