The herbs section of the farmer’s market is most exciting during the Spring and Summer season. Bouquet of various basil, thyme, and mint is full and abundant. Shiso, or Perilla, is an herb from the mint family and is largely used in traditional Japanese cooking. The sparks of its intense flavor is refreshing and complex, giving contrast to the floral and buttery notes of Mountain Range oolong.

The pale yellow infusion showcases bursts of cinnamon, fennel and nutmeg against an ocean of vegetal freshness. The liquor is refined, highlighting the spicy licorice on a platform of fresh watercress and summer flower. The pairing is delightful and refreshing on wonderful summer days.
