Pu-erh tea is a post-fermented black tea made in the Chinese province of Yunnan. The enzymes in its leaves are not completely deactivated by the application of heat, which means that the leaves continue to ripen if they are subsequently stored in conditions of high humidity. Some people will keep pu-erh in storage – similar to fine wines – for 60 years or longer, until it reaches the desired maturity; then it is incredibly precious. In days of yore, such exquisite teas were easily as valuable as gold and their consumption was restricted to the aristocracy exclusively.
