If I had written this tasting note when I first tasted this tea, the rating would be much lower. It has grown on me. Or, maybe I’ve just learned the brewing parameters that work for me. Either way this is becoming one of my favorites.

The black tea base is definitely astringent but not bitter. This astringency has grown on me especially in iced tea form. I think it adds something to the texture and quality of the tea. I love the pancake taste also. Definitely maple syrup and butter. I did not get butter when I first brewed this, but now I do. And the aftertaste is a clean maple syrup taste without anything artificial. It’s just good.

I brewed the tea with near boiling water for 5 minutes and then chilled it overnight. And, like many iced teas, I think it actually tastes best after about 2-3 days in the refrigerator, but not longer than 4. It must be stored in a completely closed container though. If it is open to the refrigerator then it starts tasting poorer after only 1 day.
