Having this as a latte. I went and grabbed a couple cans of coconut milk, and a box of coconut cream. I’ll be mixing up my own “coffee” creamer to have with my tea, but I thought I’d use some to indulge a little. :)

1/4 cup or so 60% coconut milk, 200ml extra strong tea, topped up with boiling water. Delicious. And the flavours in this puerh are such that the coconut milk doesn’t overpower. Yay!

It… works. It’s weird, and it didn’t set up at all in the fridge. I think it would be better if I just used the egg yolk and drizzled in the coconut milk… like I was making mayo. Which I’m sure sounds really attractive when discussing a creamer recipe. :)

I tried a chai with coconut milk and somehow it seemed wrong to me. I’m probably just accustomed to regular milk/cream in a chai…

I googled coconut coffee creamer with egg last night after reading this, and it seems popular and looks lovely and fluffy in the pictures I saw. Yours didn’t fluff up? Maybe the egg needed to be whipped up more or something – lol at making mayo.
Have you tried it it tea yet?

Sherapop, I usually use almond milk, but I’m testing to see if some additives and foods are causing digestive problems right now, so I’m using canned 100% coconut milk. It needs a LOT of diluting, and also needs to be kept warm so the oils don’t separate. :) Ahh well. It’s only a couple more weeks.
