My favorite tea for making chai lattes. Not my favorite for plain tea, but as a tea latte, my absolute favorite. The cinnamon shines when mixed with milk, and I adore how spicy a chai it is. Too often I find chai’s are not spicy enough, and this tea delivers a wonderful blend of spices, almost more spice then tea. The bite from the peppercorns is a wonderful twist.

One of my favorite teas, the mint comes in strong, the green tea is astringent, and the follow through is the licorice root, leaving my mouth sweet, and wet. I was unable to get through going to school without a mug of this to wake up, and despite the low caffeine content, was the perfect wake up, without a crash afterwards.

180 °F / 82 °C 5 min, 0 sec 5 tsp 24 OZ / 700 ML

I love this tea, but it took me forever to figure out how to prepare it. Cooler then recommended water (I find anything above 75 C leaves it bitter), and much less tea then recommended. These two adjustments let the tea’s flavor shine, without overwhelming or becoming bitter. If you can handle how temperamental this tea is to make, it is fragrant, and leaves a sweet aftertaste.
