I only see options for 205 or 212 degrees . So is there a way to get to 208 degrees (It doesnt give that option even in the custom mode unless Im doing something wrong) ? and if not, would you choose 205 or 212?

I’ve had a Breville for nearly six years now, I think (time flies!) and I don’t know of a way to achieve 208 degrees. If a tea’s parameters suggests 208 degrees, I’d go with 205 rather than the full boiling point of 212.

Not familiar with the Breville, but wouldn’t it be possible to just heat the water to 212 and wait a few minutes for it to cool down until it reads 208? Or set it for 212 and just turn it off when the heat approaches 208?

Either way though, if a tea calls for 208 water I doubt the difference with 205 water will be much if any =)

The difference between 205 and 208 seems negligible. Besides, who knows how accurate the Breville temperature really is or how much variation from unit to unit and whats the repeatability within the same unit. Teapot with candy thermometer is probably more accurate. Will we ever notice the difference that can be attributed to 3 degrees F with so many other variables?

You bring up a good point. Even location can throw things off. Someone living in Denver can barely break 200F!
