What's the suitable temperature of water to brew green tea?

I heard that it’s important to control the temperature of the water when you brew green tea. So what’s the suitable temperature?

70 – 78 deg. C is generally where I brew my greens. Or coldbrewed for iced teas. Most teas do well with longer steep times cold and shorter steep times hot. Boiling water burns some tea leaves. I notice my lighter teas (yellow, white, green, jade oolong) taste much better at lower temps.

Thank you for let me knowing so much!

Some green teas take boiling water, like for example genmaicha, bancha and houjicha.

Others are best at 70 to 80 degrees celcius, like sencha and many Chinese greens, and for example gyokuro should be brewed with lukewarm water.

So I guess that it depends on the green tea.

For most of my standard green teas, around 70-80C/158-176F. But depending on the tea, I sometimes go as low as 50C (for some gyokuro, for example), start at 60C and eventually increase to 80C (this is how I’m doing my shincha now, and how I usually do kabusecha), or steep close to boiling (houjicha, for example). And as some others have mentioned, overnight cold brews are great.

175 for most chinese greens and sencha. 185 for dragonwell and other greens that do well with higher temps. I dont think Ive ever brewed a green over 190.
