I always worry a bit about cold brewing tea. I feel like tea is always manufactured and packaged with the intention of it being steeped in either very hot or boiling water. There probably isn’t much to worry about it is always in the back of my mind, even more so with sun brewed tea.
I wouldn’t worry about cold brewing. It just gives a different flavour profile to the tea. I read somewhere that hot brewing “pushes” the flavour from the tea while cold brewing “pulls” the flavour from the tea. Sun tea is fine, but IMO you should drink it the same day as you brew it just because the prolonged heat from the sun can cause bacteria to grow if it is left for a long period of time (ie. more than one day).
It’s perfectly safe to cold brew. I think the tea actually tastes better, which is due to the way cold water chemically reacts with the tea. Less tannins and catechins so less bitter. Sun tea is a bit trickier because of the exposure to sun and bacteria.
One thing I realized after brewing is that double strength is the way to go when cold brewing. If you want stronger flavor, the general rule is more tea and less brew time…even with standard hot water brewing. Less tea and increased brew time and you risk a more bitter tea.
I’m new to tea as well as my husband. But he prefers ice green tea and I like it hot. At night I brew his tea in cold water over night, then add honey in the morning.
