The Scone Experiment – Here you go Amy!

Preheat your oven to 350.

In one bowl whisk together:

1 egg
1/8 Cup Maple syrup
2 Tb coconut milk
1 Tb lemon juice (maybe 1.5 or 2?)
1 Tb vanilla

In another bowl, combine:

2 cups blanched almond flour
3 tablespoons coconut flour
½ teaspoon baking soda
¼ teaspoon sea salt

mince up 3 medjool dates (or roughly 1/4 C dried fruit)

Cut 3 – 4 Tb of palm shortening into the dry ingredients, working it into little nibs.
Gently add the dates (or other dried fruit), allowing each piece to be coated in flour.
Stir in the liquid ingredients & mix gently until combined. It is a very moist dough.

Lay a piece of parchment paper on the counter, sprinkle liberally with coconut flour, scrape your dough into a blob on it, sprinkle on more coconut flour, & then gently shape it into a square or other shape of your choosing. We like to go with a square, & then slice it into smaller squares. If there are 3 of us, we go with 2 cuts each way, yielding 9 scones. If there are 4, we do the 3 X 3 cut, yielding 16. You could also cut it in pie wedges, but I’ve found that smaller shapes work best with this, as they can be crumbly. Either way, before you do the cutting, brush the whole thing with some coconut milk & sprinkle on some of the sugar crystals of your choice. We like Palm sugar crystals or date sugar.

Lay another piece of parchment on your baking sheet. Gently transfer each piece to the sheet, & bake for 10 minutes. Rotate your pan & bake for another 8 – 10.

If you haven’t already, start the kettle, prep the teapot with something worthy, & get ready to relax! You earned it!

Variations (so far):

Dried Cranberries, or other dried fruit, instead of dates.
Other flavorings instead of vanilla
add sweet spices to the dry ingredients
add lemon or orange peel to the wet ingredients
Use date sugar, coconut crystals, or sucanat, etc instead of maple syrup, & increase coconut milk if needed

The Meyer Lemon scone
– the juice & peel of 1 meyer lemon (I almost wish I’d used 2)
– I added dried orange peel, nutmeg & cinnamon to a batch!
Other ideas:

The orange scone, or orange cranberry
The snickerdoodle scone (add snicker doodle spices)
vary the dried fruits
peaches & cream? or peach cobbler scone? I haven’t tried this one yet…Or maybe the peach cobbler breakfast bowl, which would be peaches simmered until basically pie filling, topped with cinnamon scones (or snicker doodle scones), & coconut whipped cream…oh yeah! Or it could be a parfait…
lemon ginger…add crystalized ginger to the lemon scone…
pumpkin or sweet potato scone – not yet tried

I made another batch of these today, with a tsp of cinnamon & grated in some nutmeg. I wish I had some peaches…
