This past February, while on the Island of Kaua’i, I discovered a little shop called Aloha Matcha. Handa-san
Dry appearance: Stems and leaves covered in a bright green matcha. The appearance of the stems suggests that this is an unfinished or leftover material tencha. But not a tencha you would ever use for grinding.
First infusion. Nice but a bit lacking in depth. A bit of umami an a touch of sweet grass.
Second infusion. VEGGIES. Green pepper. Fresh green beans. A bit of cabbage.
3rd Infusion: Still veggies. I think the matcha hid it on the first one. This is really nice. Now with a bit of umami.
Aroma: Vegetal like above.
If you are ever in Kaua’i be sure to stop in Hanapepe and have a matcha with Aloha Matcha.
