Tea of the Week for July 4, 2022!

YUM!

I was inspired to make this tea because this is the tea of the week for July 4. When I was a kid, we would often go to my gramma’s house to celebrate the 4th – gramma would make dinner picnic style & there would be strawberry shortcake for dessert! So strawberry shortcake has come to mean the 4th of July for me.

I love the way the Tonganagaon estate Assam black tea accentuates the “shortcake” notes here while the strawberry notes shine through beautifully. Because of the robust flavor of the Assam base, this is not your average dessert-y tea. It’s a strong black tea with lovely notes of strawberry with hints of buttery shortbread crust & cream. It’s a great way to enjoy the flavors of strawberry shortcake – for breakfast! It’s also organic, vegan, gluten-free, allergen-free & all natural!

more about this tea: I often mention my gramma in my tea descriptions – I think that’s because I make a lot of dessert-y teas & she was an amazing baker – so a lot of my flavors are inspired by desserts my gramma would make. Way back when you could find strawberry fields in Orange County, California (I’m pretty sure that most, if not all, of those fields have since been “improved” into either residential lots or shopping centers. (Which – in my opinion – is NOT an improvement. I’d rather have a strawberry field!) Anyway – back when strawberry fields could be found in Orange County, my gramma lived just a couple of blocks away from a strawberry field & she would stop by that field at least once a week in the summer – and bring home a huge flat of freshly picked that morning strawberries that had been ripened in the California sun.

Those strawberries were so good & the one thing that could make them even better was to have them macerated & ladled over gramma’s freshly baked shortcakes! The shortcakes would absorb the juices from the strawberries & every bite was like something right out of a dream.

Those delicious flavors were what inspired this tea. Now, I’m not going to say this tastes just like it – because there was something magical about a bite of gramma’s strawberry shortcake that no beverage could ever capture – instead, this is more like a rich, malty, flavorful black tea with notes of strawberry shortcake that work their way to the palate throughout the sip & finishes with a lovely berry tingle on the tongue. As I sit here, sipping this tea, it is evoking beautiful memories of one of the most important women in my life.

to brew: before measuring, I recommend giving the pouch a gentle shake to redistribute the ingredients. Use about 2.75 grams of leaf to 12oz of nearly boiling water (205°F) & steep for about 3 minutes. (I started straining at about 2 minutes, 50 seconds because I was a little worried that the Assam would get bitter at the 3 minute mark. Assam does that.) Allow to cool for at least 10 minutes before you start sipping.

serving suggestion: As you may notice with the above brewing parameters, they vary just slightly from my usual parameters. That’s because this is a pure assam base, and it can be finicky! So, it makes for a better tea experience if you make slight adjustments to your usual brewing method with this tea.

That said, this is fantastic served hot! (After it’s cooled at least 10 minutes.) I get a really nice, creamy note from the tea & lovely notes of strawberry as well.

The cool time is paramount here, it really helps to bring the flavors into focus.

I’ve determined that brewing teas at work generally is a suboptimal experience – it’s probably the water, somehow, but tea definitely just doesn’t taste as good as it does at home (where we have softener, brita-filtered water… which doesn’t seem like it should be the ideal combo but seems to work). This tea lived at work for a while, and I’ve only drank it there, to mediocre results. Different story tonight at home – rich and bready base, roasted strawberry near the back. A slight bit of astringency to remind you that it’s tea. Definite creaminess lingering on the palate after swallowing. This is really quite good. At its core it’s really just a strawberry black, done by countless tea companies, but the execution is definitely the best I remember tasting. Yum. Too bad I only have one packet of it!

More strawberry than shortcake. Slightly tangy, bright fruit. Not getting too much cakey-ness, more of a slight vanilla. Still a nice strawberry blend.

The flavoring here was much milder than I would have preferred. I did get a bit of strawberry, but nothing cakey. The resteep was almost as flavorful as the first steep. The second time I had this, I unfortunately found it to be too boring to have a third time. Nice black tea, but flavoring too mild.

I don’t know what is worse: not being able to order more of this incredibly delicious tea because it’s out of stock or hoarding it knowing that I can never replenish it because it’s limited addition. The possible moral of the story is that “sometimes it’s better to have loved and lost than to never have loved at all,” or whatever.. (Nope, I hate the moral).

I don’t normally even like strawberry flavoured things all that much, but the juxtaposition of a bold assam and a rich buttery cookie flavours is sublime. Now, if you’ll excuse me I’m going to cry over my empty pouch.

This is the tea of the week for July 4, 2022 (it was just added to the website) & since I have yet to complete May’s scavenger hunt (and a Strawberry Tea is one of the prompts for May’s scavenger hunt) I decided to post here as I do my final taste test of this tea & also post it as part of my scavenger hunt teas. :)

This is so good. I love how it turned out (I know I say that a lot.) The solid Assam base is hearty & malty. It’s the primary flavor of this tea – however, as I continue to sip, the flavors of strawberry shortcake continue to develop & make themselves known. It starts off as a very gentle note of strawberry & hints of vanilla & butter. By mid-sip, I can taste buttery shortbread & a more pronounced strawberry note & a lovely note of cream. The butter really becomes defined as it continues to cool & I continue to sip.

Because this is an Assam, attention to the steep time is important. I recommend somewhere between 2 1/2 minutes to 3 minutes, but not beyond that because the longer this one steeps, the more risk of bitterness. When you do hit that sweet spot (for me, it is 2 minutes 45 seconds) you get a really rich, flavorful, malty black tea that is exactly the flavor I look for in a breakfast tea.

The cool time is also essential for this particular tea. It needs at least 10 minutes to cool before you start sipping. If you drink it fresh & hot right out of the teapot – it’s going to taste like black tea. A really flavorful, delicious black tea but if you want that strawberry flavor, wait a few minutes (at least 10) – the flavor will continue to develop..

It’s also a delicious tea to come back to about an hour later after you’ve forgotten that it’s waiting for you on the counter – (this is my way of saying it’s a good iced tea!)

Yeah, it doesn’t always happen that way. Sometimes (not often) the blend just does not work and I need to go in a completely different direction. Sometimes it didn’t quite turn out the way I wanted to but it is still tasty (sometimes even better than expected). It’s hard to know how the leaves will react with the ingredients sometimes.

Applies to yarn, cutting and gluing, concocting kids’ activities…(I’m laughing at “the blend just does not work.” Describes the kids I’ve been teaching for two years two a T! Love them all individually, but oh, the combined chemistry!)
