It’s been a while since I crafted a white tea, so I decided it was time to do something about that. I obtained this lovely bai mu dan from my supplier & with apple season upon us, I decided that an apple white tea sounded absolutely divine!

But I couldn’t just stop at apple. I decided to also add some honey essence (it’s vegan!) & some cinnamon chips. The result is amazing! So pleasantly warm with the cinnamon, hints of sweet honey & just the right amount of crisp granny smith apple flavor. I love it!

It’s organic, vegan, gluten-free, allergen-friendly & all natural too!

organic ingredients: white tea, granny smith apples, cinnamon & all natural flavors

to brew: use 3g of tea to 12oz of water heated to 165°F, steep for 4 minutes, strain & allow to cool.

serving suggestion: hot tea is generally my favorite way to enjoy tea, especially when the weather turns cool like it has at this point, so it should come as no surprise that I’m going to suggest enjoying this tea as a hot beverage – but, it would make a splendid cold-brew as well! I enjoyed it without sweetener, but I found that when I added just a teensy bit of sugar, it brought out some of those honey notes.

My last minute 52Teas Countdown arrived this week! Well, technically earlier – I just wasn’t in office to receive it until this week. In addition to the countdown I picked up samples of anything else on the site that was interesting to me, which included a few different apple blends!

I’m gonna be honest, it was the honey in this that was really why I wanted to try it. 52Teas has an older blend that’s Honey and Blood Orange on a white tea base, and the honey in that is one of my all time favourite honey flavours. It’s sweet, creamy, and has that beeswax kind of note to it as well. Somewhat unfortunately, I think the apple in this blend is so strong that it sort of hides any honey notes that might be happening and, honestly, a lot of the cinnamon as well…

But here’s the thing! It’s such a fresh, crisp, naturally sweet and authentic apple note that I kind of forgot while I was drinking this that there were other flavours I was supposed to be picking up. Other flavours, mind you, that were the reason I bought the tea! I was just having such a good time drinking this beautiful apple blend that I couldn’t have cared less about anything else.

Today’s tea! This one would be great for Rosh Hashanah. No hay note here! Delicate apple and cinnamon, with a nice sweet note. This is such an easy drinker – it goes down very smoothly. Gonna see if it resteeps.
