There are several grades of Ti Kuan Yin (a.k.a Iron Goddess of Mercy). This particular type is the top nbr 1 grade. When comparing to other Ti Kuan Yin’s, you will see a better leaf presentation which results in a more refined character – and hence the special moniker – PHOENIX #1. It has been written that Ti Kuan Yin is at first bitter, then sweet and finishes with a fragrance which lingers on your palate. We find this particular grade is sweet with a fragrant finish and has no bitter notes.

The best Oolong tea I’ve ever had. It’s sweet with a floral finish and aroma. Never bitter. A lovely tea for any time of the day or night – and especially if you’re a fan of Oolong teas. If you’re new to Oolong don’t start out with this one because if you do, all the others will taste terrible!

I have resteeped this twice with good results. They claim you can resteep it more than that but I don’t, mainly because I like a fresh pot of tea.
