From Harney & Sons

Mike visited this remote village in the Thousand Islands lake region of Zhejiang Province. It was one of the prettiest tea gardens. There they make a dark green tea. For a green tea, it has more body than most. In fact it has almost a creamy texture. Its aroma is vegetal, tending toward asparagus. This delightful tea is rarely seen outside of China.

We decided for the last tea of the day we might try something a bit uncharacteristic, and did 4 heaping teaspoons for a 24oz point, and brewed it for 2 1/2 minutes instead of 3. Sooooo tasty! The tea is creamier than I’ve ever had it before, and there’s not a hint of dryness or bitterness! The asparagus notes are more intense. Pretty much it’s just that much better!

Today I had one of the most delicious cups I’ve ever had to date, and this tea is why. I felt like I was drinking part of the earth. It was creamy, fresh and slightly vegetal with no bitterness. Brew this correctly and it cannot disappoint. I’d rather drink this than a cup of wine.
