Though not widely known outside China, southwestern Yunnan province produces some of the world’s most unique and flavorful green teas. One of the most highly prized among them is the silvery, down-covered leaf of Misty Mountain. The taste is bright, crisp, and distinctively fruity, and the large, hearty buds last through many infusions.

PREPARATION: To prepare Misty Mountain tea in a teapot traditional Gaiwan tea cups, we recommend 3-4 grams of tea per gaiwan or 8-10 oz of water if teapot is used, 70-75°C (158-167°F) water, and an infusion time of 1-3 minutes. Because of the heartiness of Yunnan tea leaves, they may be re-steeped several times.
