The Shimen area is one of the less explored and lesser-known areas of Taiwanese tea lovers, and teas have been grown here for about 100 years. The relatively characteristic style of distinctive baking, which is based on the processing of the traditional Tie Guan Yin oolong, is reflected here throughout the production, and teas from other cultivars other than Tie Guan Yin in various forms are “fine-tuned” in a similar style. This is no different in the case of this archival oolong, which was baked 3 times on electricity and finally on charcoal and then archived. Even in the dry state, old age, the nostalgic scent of old books, the light acidity of quality dark chocolate and soy sauce will breathe on you after the smell. After pouring, the typical character of archival teas from this area is manifested, which is defined by strong baking, which over time develops into medicinal tones with light salinity and a pleasant decent acidity, which only blinks against the background of the prevailing sweetness.
