Description

Very good, archival tea from the Shimen Farmers Association, which we visited in February 2020. It is a tea that was stored by the association all the time, here also baked on charcoal and then stored in a clean and dry warehouse. The tea is, of course, heavily roasted in the traditional style of the area, so after pouring it gives a bright dark orange to orange-brown infusion, on the surface of which a characteristic haze of essential oils is formed, which we see in well-ripened teas. The taste is clean, sweet, in the beginning with a light acidity (the result of catechin conversion) and a hint of salinity. The aroma gradually changes from heavily baked, pre-dried plums, dried longan, tobacco stalks, soy sauce, and a beautiful tone of fresh fruit, Chinese medicinal herbs and rare woods.
