From Tea Mountain

The Sofu cultivar is relatively new among Japanese cultivars and is not yet well-known. Due to its distinct floral aroma (reminiscent of jasmine), farmers often use it to make experimental semi-green teas, as well as very good sencha-type teas. However, some can have a higher astringency, which may not always be pleasant. That is why we were very pleased when we tasted a sample of this tea this year. It has a very pleasant aroma, and the taste is sweet, lively and juicy, light. The appearance of the leaf suggests that the tea has undergone a slight wilting, which has enhanced the floral aroma, which is slightly reminiscent of jasmine, linden and lilac, but also, for example, fresh cucumber or melon peel. The aftertaste remains pleasant, attractive freshness with a slight trace of pleasant astringency. An excellent representative of this cultivar at a reasonable price.

The crisp sencha has a nice bitterness without it ever getting overwhelming. Its mouthfeel is very smooth and soft and its aroma is sweet and floral with notes of rice and seaweed. The taste is grassy, vegetal and milky. One specific flavour I noticed is also kohlrabi.
