This gorgeous yellow tea from Anhui province, China undergoes an extended and very gentle withering process that results in a cup that is very smooth, light in color-but more body than many green teas, and very refreshing without the grassiness of some green teas.

This is the first time I’ve tried a yellow tea, and it’s funny, it’s exactly what I imagined it might be like—a cross between white and green tea. It has white tea’s mildness, its lightness, but there’s a slight grassiness (not in a bad way, and that’s a taste that usually puts me off.) I like it—a very refreshing tea somehow, although not I think destined to be a favorite.
1st Steeping: Sweet, almost like a very very sweet Dragonwell (Longjing) and kinda looks like it but did not get any honey taste out of this brew, slight chestnut taste. Might have to steep it differently as I have gotten a wonderful honey taste out of a different yellow tea. Really clean tasting, brewed in a small 21oz cast iron teapot.
2nd Steeping: Brewed for 2 min instead of 3 @ same temp. I am getting a hint of honey taste out of it. Still really sweet. Very similar notes and taste as the first brew.
Not the most exciting tea for me personally, but none the less quite tasty.
now i do like green tea, and i don’t mind grassy tastes — this is supposed to be green tea for people who don’t like vegetal tones. so from that standpoint, it is just a toned-down sweet green tea. but here are the redeeming points: 1 — sometimes you DO want a green tea without vegetal notes! 2 — sometimes you want a white tea with more flavor! 3 — this is only buds, and the mouthfeel is sensationally smooth. 4 — sweet, honey, divine taste. 5 — impress all your friends by having a “yellow tea” and they’ve never even heard of such a thing :)
