A brand new black tea commission and the first time this tea was ever made by the farmer. Another lovely white2tea experiment gone right.

Sunskate was oxidized very lightly, so much so that we could probably refer to it as a strange oolong instead of a black tea. The goal was to leave room for further aging and oxidation in the coming years, but it’s a beautiful tea fresh as well. Made from material usually destined for raw Puer production, Sunskate has a syrupy thick body with bright aromas uncommon in a black tea.

Pressed in 2021. Each cake is 200g. The cakes are in bamboo tongs, with five cakes per tong.

This one got set aside with the puer until a few months ago, oops. Just broke up the second half of the cake. Very enjoyable, if a bit one note. Flavor is mostly dominated by sweetness – rock sugar/honey. Medium high intensity of beta damascenone and low for cereal. Overall well balanced. A good tea but probably a bit past its prime.

I used 11 grams in porcelain. 250 mL of boiling water. One rinse @80C. Short steeps to start. Currently on cup 7 and still good depth of flavor. Will let it sit overnight in the fridge with another ~750 mL for tomorrow.

Gongfu!

Finally breaking into this cake!! The aroma coming off the compressed cake is so saturated and fruity and it very much reminds me of overripe peaches with a bit of a more mineral kind of undertone. That syrupy peach note carries into the steeped tea as well – it reminds me of peaches that are so tender and ripe that they practically melt in your mouth as you eat them. It’s also full bodied and just a tiny bit astringent/tannic with deeper non-fruity notes of bittersweet baker’s chocolate, leather, oak, and malt – but really it’s those notes of golden juicy peach that dominate the cup for me! Love how coating the liquor is on the palate, despite a mostly clean finish. Excited to get to know this unique black tea a little better!
