I found this video to be very informative on the tea culture in a country which I personally know little about.
In particular I found the section where they discuss American Tea culture to be enlightening. What do you think?
I watched the video and this is how I make my tea at home. I went with my friend from Lebanon to a place in San Francisco that makes tea this exact way. We have a Turkish coffee house in Fort Collins that has tea but doesn’t make it with fresh mint…which is a shame. I grow mint and do it myself (but I buy the little exquisite pastries from the shop…there are 30 different kinds at least!). Oh and the Labne (what looks like cream cheese in the video) is actually greek yoghert that has been drained to spreading consistancy. You can make it yourself or buy it in Middle Eastern markets. My Favorite yoghert bar none!!!

Ah, use cheesecloth. Line a colindar and place it over a bowl then put in a container of greek yoghert and let the whey drain off. (I don’t like this method much because the yoghert costs too much for what is left) Labne already made is the same price as Greek Yoghert and the shelf life in the frig is almost 2 months and it doesn’t make whey (water). You can spred it, sweeten it, use instead of sour cream etc. Lower fat and calories than cheese. On flat bread you can have it spread and warmed with honey drizzle or with olive oil and zaatar (sesame, salt and sumac blend). There are lots of images and directions online. I make a cold smoked salmon pizza with it as the base which is a good meal for me or a nice appitizer with wine for friends.
Great thank you! the cold smoked salmon pizza sounds delicious. Should one use the Labne quickly? A.K.A. does it go bad quickly?
The kind I buy lasts about a month to 6 weeks. The kind you make probably about 3-4 weeks. Because it’s dryer without as much whey it lasts longer. When I diet I’ll slice strawberries and use 1-2 TB of Labne and drizzle a little honey. The Labne is thick and rich like sour cream and takes the need for blowing the diet away…and it has protein which is good for me. You can spread it on those 100 calorie bread buns like cream cheese, all sorts of things.
