Matcha in the fridge??

Uh oh, have I been doing it wrong? I just noticed a mention on Red Leaf’s website that matcha should be kept cold. I’ve just been keeping my matcha at room temperature in little tins. Is this bad for my matcha?

Well Ummmmm lol okay here is my OPINION …. If you are not going to go through it quickly I would store it in the fridge – I have even read the freezer. Make sure however you have it well sealed or it could pick up other flavors as anything would or could.
However if you rip roar through it the way I do then I doubt you really have to.
Any tea will lose flavor over time. Some people keep all their tea in a cool place like the fridge but I would need a full sized fridge JUST for tea so I just keep it in a dry cool place out of the sun in containers or bags that are not clear so no light hits them!
I have a lot of matcha so I do worry that some flavors will lose flavor over time – ones I don’t crave and drink as often – those I may end up putting in the fridge but I have not done so yet – for the most part I have only been into the matcha for this past month or two.
So I really don’t know that much about it but this is why my 6th sense tells me and I listen to my 6th sense more than any others. :)
Sense 1 through 5 tend to be fairly ignorant and get me into trouble.
Sorry Im not making sense here Im not feeling well and so I think Im saying stupid things.
Regardless …. if you plan to have it around a long time – store it away in the fridge. If not just keep it cool (if your home is hot that could pose an issue you don’t want it baking in the tin!) in a place that sun is not hitting it, in a air tight container. Etc.
Hope some of that made some form of sense.
I really don’t know that much – I just act like I do. :)

My entire tea collection is stored in tightly sealed tins and pouches, in my basement bedroom, where it’s cool and dry year round. Everything seems to keep pretty well down here, though I go through tea pretty darn quick, with me drinking 8+ cups a day and all that.

Matcha will degrade faster in a place with high temperature and high humidity. However, if you drink matcha often you may get away with just using the little tin and keeping it in a reasonably dry and cool place, since you’re going to finish it rather quickly.
Same principle applies for loose leaf.
It’s all up to you, really. I don’t have matcha in the fridge, but if I bought a really expensive one I probably would.

This is what we recommend to our customers:

-Once your can is opened, feel free to store it at room temperature if you plan on going through it within 30 days (about 1 serving a day).
-Once your can is opened and you know it will take longer than 30 days to go through it, then store it in the fridge.
-Keep all unopened, sealed cans in the freezer (buy in bulk so you can save money). Once you are ready to use one of those cans, move it to the fridge for a couple of hours to bring it up to a warmer temperature before using.

The science behind this is that all organic material breaks down over time. Lowering the temperature of the material slows down the break-down process. On www.kaimatcha.com we offer a bulk package of 6 cans. When they arrive you keep one at room temperature or in the fridge, and you place the rest in the freezer. You save $10 per can buying in bulk so it is totally worth it. In my experience, matcha can stay fresh even staying in the freezer for up to 1 year.

The only thing you might notice with matcha that has been stored in the freezer is that it won’t foam as much when whisked. However, all of the nutrients, antioxidant value, taste, aroma, and health benefits remain the same!

Wow, this turned into a longer response than I realized! Hope that helped!

Thanks for the info everyone. I’m going to start keeping the flavours I don’t have as often in the fridge. Won’t be necessary for my cheesecake matcha though :P
