Hoji-Cha is unique to it’s green-tea cousins due to the unique preparation, roasted at high temperatures in a porcelain pot instead of the standard steaming process. Due to this practice, the tea takes on a reddish brown colour and replaces green tea’s normally vegetative tones with a toasted, caramel-like flavour. Popular at dinner or before bed, this brew has a calming effect that will put you at ease.
Earthy caramel tones carry throughout, with evidence of the smooth green-tea undertones from the original pre-roast leaf.
Unlike other teas, green tea should not be prepared too hot, or you risk burning the tea and adding a bitter element to the brew. 3g per 200ml of water at 60-70C for 2-3 minutes is recommended. Can be re-steeped 2-3 additional times. Thereafter, new tea should be added.
