(Yame, Japan) Our Yame Tea Garden has been awarded many world awards for excellence in their products for years and is ISO 22000. Emblem of Japanese refinement, this tea is originally a blend of Gyokuro and Tencha of reduced quality in powder to be consumed every day for its nutritive virtues, in default of the ceremonial matcha. It is emulsified in hot water using a bamboo whip to produce a “liquid jade mousse” that develops a creamy taste, marine, vegetable, white chocolate and full of umami.

Preparation : 95 C ° / 2g = 60ml of water (or lengthened to 120ml)

This is a very old sample in my stash that I decided to finally just finish off. The bag it came in doesn’t reseal so I unwisely decided to use all 8g in the matcha I whisked up. It was a big matcha bowl, but I don’t think there was any saving this. The flavour was very chalky and bitter, and the matcha was very astringent too.

I’m sure a more reasonable amount of matcha would have been better but the quality here seemed crude in general, so maybe I’m thankful to have just gotten it all out of the way even if the chawan was bordering on undrinkable.
