A rare tea produced only a few days each Spring that features a great bamboo nose and a slight nutty taste followed by a lingering sweet after-taste.

The main difference between Yellow and Green teas is that Yellow teas have a longer drying period, resulting in a greater degree of oxidisation than Green teas. Huoshan Huang Ya Yellow Tea is prepared by lightly pan frying the leaves, storing them in a darkened room while wrapped in a thick cloth and subsequently re-frying the tea over a period of three days.

How It’s Made: One bud with one or two leaves

Origin: Bai Ma Jiang Peak, Da Bie Shan Mountains, Huoshan County, Anhui Province, East China.

I got this tea as part of my Christmas present and I was pleasantly surprised. Firstly, this is the first yellow tea I’ve ever had and I didn’t expect anything. The smell of the dry leaves kind of reminds me of a black tea with chocolate-y notes, but does not reflect the smell of the wet leaves or the actual tea at all. The wet leaves smell very floral and remind me a lot of freshly cut grass. The tea when steeped has an interesting floral / flower-ish taste with a very faint hint of nuts / wood in the finish. Definitely a tea I would recommend.
