The best highland tea gardens of the ‘Scented Isle’ yield mellow, golden teas with an aromatic bouquet. We select the very best teas from estates in the Dimbula region, where in the cool clean air the tea bushes grow more slowly, producing a fine quality crop with a delicate flavour and rosy colour.

Use a warmed teapot and add one teaspoon of tea per person and an extra ‘one for the pot’. Add freshly boiled water and infuse for 3-4 minutes. Serve on its own, or add milk or a slice of lemon.

My first Ceylon in my quest to learn more about black tea. I actually have the bagged variety.

Opened the box and a rush of fragrant, quintessential “this be TEA!” scent rushed at me. I immediately decided to brew it by the book, i.e., as close to the instructions on the box as possible. Which were: steep 4-5 min. in freshly boiled water, add milk or lemon. Pretty basic. Although I did use a large mug, so I also used two bags rather than one.

The sweet tea scent disippated after steeping, which made me sad. Perhaps I smothered it with too much milk. Next time I’ll try it plain. I may even purchase a lemon or two for my tea trials.

Cooled it a few minutes before drinking. This was my second mug of breakfast tea, so I wasn’t in a hurry.

This is sweet and gentle in my mouth. No astringency or bitterness. I could see keeping a pot handy throughout the morning and perhaps into the afternoon. Will have to see how the caffeine affects me after this cup.

I also have a sample bag of Harney’s to try so that will be next. But I would certainly buy this again. I believe I prefer it to T&H’s Pure Assam, but later in the weekend maybe I’ll try those two (Ceylon vs. Assam) head-to-head.

Having this with breakfast. A little brisk to wake the senses.

A bit of a change for breakfast this morning. A round flavor with a little spiciness, but only a touch of bitterness, despite using hotter water than I normally use.

Brisk, with a little bitterness, but not overpowering in bitterness. A great “get me through this mess of an afternoon” pause.

Serviceable, but the amount of dust in the loose leaf can make it a challenge unless you have a superb strainer.

Having with breakfast on a leisurely Saturday morning. A smooth, round flavor with no bitterness. Brewed with slightly cooled water (bring to full boil in kettle, remove kettle lid and wait 2 minutes, then steep), served with a few drops of milk.

Re-steep. Not as full this time around, but still has fairly good flavor.

My “after-breakfast” tea that will carry me through until the afternoon. Water was a little hotter than normal (just off the boil as opposed to a two-minute cool-down), so it’s a little more robust. Just a dot or two of milk in the cup helps soften the sharp edges.

Having this with breakfast. Looking forward to the second steep later on in the day – it holds up surprisingly well!

I think I could have this tea any time, day or night. The flavor is fantastic.

Resteep. Still quite a bit of flavor! Used water a little hotter than the first steep, but no other changes.

Finally bought some more! A nice, round tea, excellent for the afternoon or during lunch.

Tragedy struck – it’s the last of this tin! But good to the last steep. I must get some more soon.

A beautifully grey, drizzly day bringing those fantastic smells that only a summer rainstorm can bring. A moment’s rest from the world with this tea.

I’m running out of my breakfast tea! I have to pick up more.

Sipping from a ceramic cup this morning instead of my usual travel mug. Brought water to a boil, took off heat, removed kettle lid for two minutes, then poured water over leaf. Slightly bitter, but in a pleasant way.

I’m glad to find a semi-local place to get this!

Just a drop of milk to soften the edges.
