Flavor Profile

Sparrow’s Tongue is vegetal, with an aroma that reminds us of steamed bok choy. It’s “steamed veggie” notes aren’t sharp or overpowering like some green teas can be, but rather has more of a smoothness that makes it a great desktop companion.

It’s a perfect candidate for brewing with the basics. Just make sure you use cooler water.
Style

The dry leaf appears cloudy green with a few white buds sprinkled about. Once brewed, the leaves turn bright light green and you can see the full leaves almost as they looked when picked during the spring harvest. They are a mixture of single leaves and buds and make for a pleasantly simple, yet refined cup.

This leaf is so delicate! Once infused – the aroma blows me away! It was vegetal and savory and I agree that it totally resembles the scent of Bok Choy! Wow!! And now that I taste it…it sort of tastes like Bok Choy, too! This has a distinct flavor. I really like this! Two thumbs up!
