And making the perfect cup of tea starts with a quality filtered or spring water. China’s most famous green tea comes from the Zhejiang Province where a local well was believed the lair of a fierce dragon. It is flat-dried by hand, one batch at a time, to yeild its trademark sword blade-shaped leaves.
