This delightful green tea is grown organically in Shizuoka. Medium steamed, it is rather bold in flavor and imparts a much stronger than average aroma. The leaf itself has not been particularly finely processed, however once brewed it is very flavorful. Our particular Sayamakaori gives quite a few delicious multiple infusions, more than the average sencha we come across. Very delicious, we predict this will become a favorite with organic green tea enthusiasts. As with all of our loose leaf green teas, packaged in nitrogen flushed packaging.

Opening the bag you’ll encounter very intense but at the same time pleasing grassy aroma of the leaves which happen to be light green in colour. Here and there you’ll notice stems which are lighter in colour and give this tea more natural look while you inspect it. Tea itself is mildly sweet and has a pleasing flavor. Using recommended brewing parameters, I encountered decent but not overwhelming astringent punch. Umami “runs away” quickly but it’s there. It’s light (green) in colour as well as in taste (almost like asamushi) but it has decent roundness. I prefered brewing it at the slightly higher tempereatures and for shorter periods of time to extract the most out of it and I was not dissapointed. Very nice organic green tea with floral aroma and subtle but “sincere” flavor. I like drinking it especially after my workouts- combining already elevated levels of endorphins with theanine and catehins from green tea is the way to go.

I like this tea for its price, JAS organic certification, strong flavors and aroma, and ease of brewing. I thought it would be fun to do a Google Maps search for the farm listed on the sealed packet, which is actually a small temple (Tokoji) in the mountains just north of Shimada. I used the street view function to get a feel of the quaint and charming origins of this tea. It made me appreciate it more.

When I opened the bag I was impressed by the strong scent of the dry leaves. The tea soup is lime green and the steeped leaves are fragrant. The first steep is sharp yet flowery, the third steep has notes of complex minerals and is well balanced, the forth and fifth steeps have a refreshing astringency and still leave a sweet aftertaste.

Being medium-steamed, it has a bit more robust of a green flavor than the lightly steamed senchas I normally have. A deeper green color as well, with bits of tea at the bottom of the cup to add a bit of punch to the last sip. This is currently my morning cup, a bit more robust to help with the cooler mornings.
