I need to work on the brewing temps for this tea. I used 165 for 2 minutes and the pineapple is great, but there is an almost peppery taste that hits the tongue two seconds after the sip that wants me to dump this cup. It smells so good, I’ll just have to play around with the next cup more.

I won’t rate this tea for now.

AWESOME.
The pineapple/guava combo is a winner. Though I can’t really distinguish much of the guava, the pineapple really comes through. It’s sweet, but not too sweet. The pineapple tastes just like a traditional pineapple-jelly Korean Moon Cake.
The fragrance is awesome, and gets stronger over time. The taste is slightly weaker than the aroma, as I taste it more in the nose than the tongue. But nonetheless, it’s sufficiently strong for a white tea.
No tannin taste after the cup, just sweet goodness.

Put a tea with pineapple in front of me, and I’m a happy camper. This one is no exception to that rule. The pineapple is crisp, and the guava flavor gives it a nice tang. The fruit doesn’t overpower the taste of the white tea, either. A very good tea for summer; it’s also good iced.

If I hide from the Monday, the Monday will go away. Right?

My eleventy-eleventh note! Didn’t even realize I’d broken one hundred.

Made two cups in the Breville…yes, I know it’s for loose-leaf, but for two cups, there’s plenty of room in the basket for the bags. And it worked really well.

I’ve been brewing this with water that was too hot. I’ve never temped the water before, just guestimated the temp. This cup is fresh, clean-tasting, light. I can taste more of the guava as well, and the pineapple is even more delicious. Previous cups have been heavier, denser, but this one…it’s crisp and bright.
