White Tea by Wing Hop Fung

Treat yourself to a cup of luxurious tea grown in the Anji County of Zhejiang Province, China. White tea is rarely produced and furthermore, is mostly, if not only originated from China. Among those, Anji’s white tea of any class (Precious, Royal, Supreme, Premium) is highly prized and one of the best teas the region produces. The grading of this tea, Precious, is the highest grade available and is based on the leaf’s size and where on the bush it was harvested. Its long, thin, and straight olive-green tea leaves brews a light yellow hue.

Mellow and gorgeous, but just a tiny bit tempermental: infused cool, it is sweet, vegetal, floral; infused too hot, it can get bitter and sharp. Notes of asparagus, peas and honey.

Infused 1g per ounce water at 160 degrees, 30 seconds for first steep, and up to 6 steeps at increasing times/steep.

I scented some of this with citrus flowers from my yard, and it was mind-blowingly good.

Today’s infusion is so sweet, so floral, so rich and yet so delicate, so gorgeous, so perfect.

Love this brilliant tea.

Being a total novice I could discern this from my current favourite – the Chinese silver needle. I found the Anji white to be aromatic and at the same time subtle. Nice :)

Definitely one of my favourites now ! Its grown on me and I love it as much as the Silver Needle ! :-) Finding it to be subtle and even more aromatic ! ( but then I am a novice !)
